PURPOSE: A regenerative electric fryer and control method thereof are provided to make food tasty by heating food materials at set temperature. CONSTITUTION: A regenerative electric fryer(1) comprises an oil tank(20), an electric heater(60), a heat exchanger(70), a heat storage tank(30), and a pump(40). The heat exchanger is mounted on the oil tank, and heats frying oil by the heat exchange with heat medium oil. The heat storage tank is mounted on a body, and connected to the heat exchanger by pipes. A heater for the heat medium oil is mounted inside the heat storage tank. The heat storage tank supplied the heat medium oil to the heat exchanger. The pump supplies the heat medium oil in the heat storage tank to the heat exchanger. The pump recovers the heat medium oil cooled in the heat exchanger to the heat storage tank.
