<P>PROBLEM TO BE SOLVED: To provide a method for producing fried food which can be properly preserved without losing its crunchiness in any of ways such as room-temperature preserving, in-refrigerator preserving, frozen preserving and the like, and which can keep a freshly-fried texture without spoiling the crunchiness even in the case of being re-heated by a microwave oven. <P>SOLUTION: In the method for producing the fried food in which the surface of an ingredient, coated with an attaching powder, a batter solution and a breadcrumb, is fried in deep oil, the ingredient is previously immersed in an ionized alkaline water for one minute or more, as its pretreatment. A powder obtained by processing a flour, burning the processed one and crushing the burned one is used as the attaching powder. A solution combined with an alkaline curdlan solution obtained by dissolving curdlan in an ionized alkaline water, is used as the batter solution. <P>COPYRIGHT: (C)2008,JPO&INPIT |
