PURPOSE: High calcium concentration smoked fish with chewy texture, and a producing method thereof are provided to prevent damage to the taste of fish. CONSTITUTION: A producing method of high calcium concentration smoked fish comprises the following steps: soaking frozen mackerels in 4-5 deg. C water for an hour; removing the gill from the mackerels; washing the mackerels with clean water; adjusting the salinity of sea water to 3%, and adding 20% of water-soluble calcium, 5% of sodium hydrogen carbonate, 10% of citric acid, and 65% of alkaline water into the water to obtain a functional solution; diluting the functional solution with purified water; soaking the mackerels in the functional solution for an hour, and smoking the mackerels for 50 minutes; cooling the smoked mackerels, and sterilizing the mackerels for 30 minutes; and packaging the mackerels using an automatic packaging device. |
