PURPOSE: A garlic powder composition containing olive oil, and a producing method thereof are provided to reduce the unique flavor of garlic, and to maintain the nutrition of the garlic. CONSTITUTION: A producing method of a garlic powder composition containing olive oil comprises the following steps: removing foreign materials from garlic, and peeling; firstly washing the peeled garlic in flowing water at 20-30 deg. C; soaking the washed garlic in a solution containing m hypochlorite for 5 minutes; secondly washing the soaked garlic in water at 15-20 deg. C, and naturally drying the garlic at room temperature for 12-30 hours on a perforated screen; crushing the garlic into 3-4mm particles; and mixing the garlic powder with the olive oil, salt, black pepper powder, fructose, a Sparassis crispa hot water extract, and a chokeberry leaf hot water extract.
