<P>PROBLEM TO BE SOLVED: To provide a device and method for removing the neck skin of a poultry carcass which can recover the neck skin having a high product value at a high yield. <P>SOLUTION: The neck skin removal device 1 for removing the neck skin of a poultry carcass 50 whose head has been removed includes: a shackle 3 for hanging the poultry carcass 50, of which the neck skin has been cut from the throat to the base of the head in a direction of the cervical vertebra, so that the legs are located upward; a neck skin holding means for holding the neck skin by surrounding the neck of the poultry carcass 50, hung by the shackle 3, by a plurality of holding members; and a moving means for moving the neck skin holding means to the lower side. The neck skin around the cervical vertebra is held by curved parts of the plurality of the holding members and the neck skin holding means is moved to the lower side by the moving means in a state where the neck skin protruding from the curved parts is sandwiched by two planes facing each other, thereby peeling the neck skin from the cervical vertebra. <P>COPYRIGHT: (C)2013,JPO&INPIT |
