PURPOSE: A producing method of Korean sausage containing pumpkin is provided to remove the unique bad smell of pig small intestines using various kinds of vegetables including the pumpkin. CONSTITUTION: A producing method of Korean sausage containing pumpkin comprises the following steps: washing pig small intestines using salt water; mixing 100 parts of water by weight, 30-50 parts of pumpkin by weight, and 0.5-1.5 parts of salt, and boiling the mixture at 85-115 deg. C for 25-35 minutes before removing the pumpkin to obtain a pumpkin solution; cooling the pumpkin solution at 4-12 deg. C, and soaking the washed pig small intestines in the solution for 15-25 minutes before removing the moisture to obtain the Korean sausage skin; mixing pork, glutinous rice, mung bean sprouts, Chinese cabbage, pumpkin, and Chung-yang green pepper to obtain stuffing; mixing ground spring onion, ground garlic, ginger juice, black pepper powder, and salt to obtain seasonings; mixing the stuffing, the seasonings, and pig blood to obtain Korean sausage stuffing; and inserting the Korean sausage stuffing into the skin, and cooking the Korean sausage in boiling water containing fermented soybean paste.
