PURPOSE: A marinating composition for bulgogi(seasoned and barbequed beef) containing mulberry, and a producing method thereof are provided to offer the cholesterol lowering capability of the mulberry to the bulgogi. CONSTITUTION: A producing method of a marinating composition for bulgogi containing mulberry comprises the following steps: mixing soy sauce, starch syrup, and sugar, and heating the mixture at 85-115 deg. C for 50-90 minutes before cooling to obtain basic sauce; adding crushed apple, crushed pear, crushed onion, red pepper paste, salt, sugar, black pepper powder, and soy sauce into the basic sauce, and boiling the mixture at 85-115 deg. C for 5-20 minutes to obtain bulgogi seasoning sauce; and adding 15wt% of mulberry into the bulgogi seasoning sauce.
