PURPOSE: A meal replacement food composition containing walnut, and a producing method thereof are provided to prevent the acidification of nuts contained in the composition for improving preserving safety. CONSTITUTION: A producing method of a meal replacement food composition containing walnut comprises the following steps: crushing vegetable fat raw materials containing more than 35wt% of fact selected from the walnut, almond, pine nuts, or adlay into 0.1-0.5mm; dissolving vitamin E, starch, dextrin, hydrogenated vegetable oil with the melting point of 40-70 deg. C, or milk fat in warm water, and homogenizing the mixture to obtain homogeneous liquid; inserting 0.1-2 parts of gum by weight selected from carrageenan, alginic acid, pectin, or guar gum into the homogeneous liquid; spraying the mixture to the crushed vegetable fat raw materials, and tumbling and drying the mixture to obtain the vegetable fat raw materials coated with the vitamin E; mixing the vegetable fat raw materials with the walnuts, brown rice, white beans, glutinous brown rice, corn, and other ingredients; and roasting the mixture at 110-130 deg. C for 5-30 minutes.
