<P>PROBLEM TO BE SOLVED: To provide a sampling device, a sampling method, and a smell detector that can efficiently sample smell substances included in saliva. <P>SOLUTION: A sampling device 50 includes a first substrate 61 having an upper surface 61a where saliva on the surface of a tongue T is sampled, and a second substrate 71 having a lower surface 71a. The first substrate 61 is provided on a first member 60 and the second substrate 71 is provided on a second member 70.
