<P>PROBLEM TO BE SOLVED: To provide uncooked dough that can be stored for long periods without requiring a complex temperature control. <P>SOLUTION: In an unheated dough inclusion body for chilled storage, dough with a water activity of 0.90-0.98 that is prepared by adding, to a mixture of flour and water, 3.0 mass% of alcohol based on the total mass of the mixture is packed in a container by gas flush packaging, using a gas including O<SB POS="POST">2</SB>concentration of 1 vol.% or less and CO<SB POS="POST">2</SB>concentration of 45 vol.% or more. <P>COPYRIGHT: (C)2013,JPO&INPIT |
