摘要 <P>PROBLEM TO BE SOLVED: To provide an alcoholic beverage for dishes, rich in flavor appropriate for seasoning, easy to use in dishes, infiltrative well into materials, stable in quality for a long period, and containing spice extract. <P>SOLUTION: The alcoholic beverage for dishes is provided, which is obtained by a process comprising the step of grinding a spice, the step of contacting the ground spice with a Japanese-sake-containing solution with an alcohol concentration of 10-75 v/v% to prepare the spice's extract liquid, and the step of distilling the thus prepared spice's extract liquid. The alcoholic beverage for dishes thus obtained contains the spice extract and is 1-60 v/v% in final alcohol concentration. It is preferable that the spice be ginger, and this alcoholic beverage belong to the category of "sho-chu" (Japanese white distilled liquor) in particular.
