PURPOSE: A producing method of a health beverage using Cornus fruit is provided to process the Cornus fruit with components useful to human body with edible vinegar for improving the effects of active ingredients. CONSTITUTION: A producing method of a health beverage using Cornus fruit comprises the following steps: washing foreign materials from the Cornus fruit using flowing water; drying the washed Cornus fruit, and removing seeds; soaking the Cornus fruit without the seeds in edible vinegar at 25-60 deg. C for 4-24 hours; mixing the Cornus fruit soaked in the vinegar with purified water, and extracting the Cornus fruit at 20-120 deg. C for 0.5-20 hours; and repeating the extraction for 1-10 times.
