<P>PROBLEM TO BE SOLVED: To provide an oil-and-fat composition having excellent water dispersion and thereby applicable to various kinds of usage, and particularly added to a food product to improve palate feeling or flavor. <P>SOLUTION: The oil-and-fat composition contains oil and fat, monoglycelide and a polyglyceryl fatty acid ester.
