<P>PROBLEM TO BE SOLVED: To provide an oil-and-fat composition having excellent water dispersion and thereby applicable to various kinds of usage, and particularly added to a food product to improve palate feeling or flavor. <P>SOLUTION: The oil-and-fat composition contains oil and fat, monoglycelide and a polyglyceryl fatty acid ester. In a preferred embodiment, the composition contains alcohol, where the constituent fatty acid in the monoglycelide is unsaturated, and an average degree of polymerization of the polyglyceryl fatty acid ester is 3-12. <P>COPYRIGHT: (C)2013,JPO&INPIT |
