摘要 PURPOSE: Red pepper paste containing wood grown ginseng, and a producing method thereof are provided to improve the quality and the palatability of the red pepper paste. CONSTITUTION: A producing method of red pepper paste containing wood grown ginseng comprises the following steps: mixing 1,800-2,220 parts of 38-42 deg. C water by weight, 420-540 parts of glutinous rice flour by weight, and 360-480 pars of malt by weight for fermenting, and filtering the mixture; inserting ginseng into the filtrate, and boiling the mixture at 110-130 deg. C for 6-8 hours before filtering; inserting a ginseng extract into soybeans, and boiling the soybeans for 6-8 hours before crushing to obtain soybean blocks; drying and fermenting the soybean blocks before crushing to obtain fermented soybean powder; and mixing the fermented soybean powder, red pepper powder, honey, salt, and a Japanese apricot or Rubus coreanus extract with the filtrate.
