摘要 PURPOSE: A producing method of nutritionally enriched functional grains and fermented red koji grains using Salicornia europaea is provided to improve the mineral concentration and nutrition of the grains using a Salicornia europaea extract. CONSTITUTION: A producing method of nutritionally enriched functional grains and fermented red koji grains using Salicornia europaea comprises the following steps: pulverizing the dried Salicornia europaea, and mixing 1kg of Salicornia europaea powder with 10L of purified water before hot water extracting at 100 deg. C for 4 hours; inserting the Salicornia europaea hot water extract into a filtering cloth, and compressing the extract to obtain Salicornia europaea concentrate; soaking 1kg of grains in 1-2L of Salicornia europaea concentrate for 6-12 hours, and drying the grains; sterilizing and steaming the grains at 121 deg. C for 15-60 minutes; injecting 1-5wt% of red koji powder or red koji spore diluent to the grains; and culturing the koji at 25-35 deg. C for 7-14 days before drying.
