FIELD: food industry.SUBSTANCE: invention relates to the fish-and-vegetable preserves production technology. The method envisages preparation of recipe components, bulb onions cutting, sauteing in vegetable oil and milling, sunflower flour pouring with drinking water and maintenance for swelling. One mixes the listed components with tomato paste, drinking water, sugar, black hot pepper, allspice, cloves, coriander and laurel leaf. One performs the mixture cooking and addition of acetic acid to produce a sauce, carrots cutting, beans cooking till double weight increase, herring cutting, maintenance in a salt solution, mealing in wheat flour and frying in vegetable oil, the herring, carrots, beans and sauce packing, sealing and sterilisation.EFFECT: method allows to reduce the manufactured target product adhesion to container walls. |
