PURPOSE: A producing method of water for extracting coffee is provided to obtain water for extracting coffee with excellent sensory properties. CONSTITUTION: A producing method of water for extracting coffee comprises the following steps: mixing 1.5-2 ml of a first additive containing KHCO3 and NaHCO3 with 1L of water, and stirring the mixture at a speed of 50-100 rpm for 10-30 minutes to dissolve the additive; and adding 1.5-2 ml of a second additive containing CaCl2 into the mixture, and stirring the mixture at a speed of 50-100 rpm for 10-30 minutes to dissolve the additive. The water is purified water, distilled water, or deionized water.
