A rotary heat exchanger for boiling out confectionery masses consists of four chambers for boiling out confectionery masses, which are cylindrical surfaces with a steam jacket, inside of which a hollow shaft with scraper knives, arranged thereon chequerwise, rotates. A scraper knife has an additional partition in the lower part, and in the upper part of the scraper knife three additional openings are made along the radius of a segment. |
