The invention relates to the use of the lipase LipBL for the hydrolysis of different substrates selected from p-nitrophenols, tributyrin, Tween 80, oils, chiral and prochiral substrates, fish oil, peracetylated sugars or nitrocefin, and to an enzymatic method for the regioselective monodeprotection of peracetylated sugars for producing monodeacetylated sugars.
