PURPOSE: Octopus slices braised in octopus ink braising sauce, and a producing method thereof are provided to obtain a canned or bottled product of the octopus slices braised in octopus ink braising sauce. CONSTITUTION: A producing method of octopus slices braised in octopus ink braising sauce comprises the following steps: removing intestines and ink from octopus, and boiling the octopus in boiling water for 20-40 minutes; removing the moisture from the boiled octopus by hanging on a hook for 810 hours; dipping the octopus into octopus stock, and aging for 812 hours; removing the mixture from the aged octopus, and freezing; cutting the frozen octopus; boiling braising sauce containing the octopus ink for 510 minutes; mixing the octopus stock, the washed octopus intestines, sea tangle, and other ingredients, and heating at low temperature for 7-8 hours; adding the ink braising sauce into the boiled octopus stock, and boiling for 1-3 minutes before cooling; and mixing the boiled octopus stock with the ink braising sauce with red pepper paste, red pepper powder, garlic powder, and other ingredients. |
