PURPOSE: An extracting apparatus of omega-3 oil is provided to extract omega-3 oil from by-products of marine organism process while removing particular smells and to embody economic and effective extraction process. CONSTITUTION: An extracting method of omega-3 oil from by-product of marine organism comprises: a carbon-containing cylinder; a cooler phase changing carbon dioxide to liquid phase; a gas storage tank storing the liquid carbon dioxide at low temperature; a reactor making the carbon dioxide at low temperature a high temperature state by being connected with a high-pressure liquid pump which pressurize the carbon dioxide and heating the carbon dioxide of high pressure through a heating unit to form an inner pressure of 150-300 bar; and a separator with a pressure controller for removing fish smells from the extracted omega-3 oil.
