PURPOSE: A composition for softening meat using medical herbs, and a meat product using thereof are provided to remove the unique bad smell from the meat. CONSTITUTION: A meat product using a composition for softening meat using medical herbs is obtained the following steps: mixing 20-40wt% of Astragalus membranaceus, 15-35wt% of Angelica gigas, 30-50wt% of Cnidium officinale, 5-20wt% of Poria cocos, and 10-30wt% of Paeonia lactiflora to obtain the composition; inserting the obtained composition with meat with water, and boiling the water; and adding 2-15wt% of Atractylodes japonica, 10-30wt% of cinnamon, 2-15wt% of Glycyrrhizae radix, 1-10wt% of black pepper powder, 1-10wt% of Atractylodes lancea, 2-15wt% of Polygonatum sibiricum, and 1-10wt% of pepper seeds into the heated mixture.
