摘要 <P>PROBLEM TO BE SOLVED: To provide dehydrated vegetables excellent in shape retention, effectively prevented from getting out of shape, excellently scattering in reconstitution to easily spread leaves, and capable of excellently exhibiting flavor and palate feeling peculiar to vegetables after rehydration. <P>SOLUTION: A method for producing the dehydrated vegetables includes blanching pretreated raw material vegetables in a blanching step (3), drying the blanched vegetables by hot air until the weight of the vegetables is reduced to 40 to 70% in a semi-drying step (4), adding saccharide and gelatin to the semi-dried vegetables in a mixing step (5), filling the product in a predetermined container in a filing step (6), and freezing the product followed by freeze-drying in a freeze-drying step (7). <P>COPYRIGHT: (C)2009,JPO&INPIT
