摘要 <P>PROBLEM TO BE SOLVED: To provide mixed flour for deep-frying and the deep-fried foodstuff using it in which the deep-fried items, small in oil absorption and excellent in texture, are obtained. <P>SOLUTION: In the mixed flour for deep-frying and the deep-fried foodstuff using it, decomposition treated crosslinking starch, to which mineral salt is blended with the crosslinking starch of 0.7 ml or more and 2.0 ml or less in sedimentation product and thermally decomposed, is 1,000 mPa s or more and 20,000 mPa s or less (measurement temperature of 30&deg;C) in heating viscosity measured by anhydrous conversion density of 15%, and its decomposition treated closslinking starch of 10 mass% or more and 50 mass% percentage or less is blended. <P>COPYRIGHT: (C)2013,JPO&INPIT
