PURPOSE: Coffee using Sasa borealis, and a producing method thereof are provided to maintain the original flavor and taste of the coffee by using Sasa borealis powder. CONSTITUTION: A producing method of coffee using Sasa borealis comprises the following steps: soaking Sasa borealis leaves in water; injecting ferment strains to the mixture, and fermenting; spray-drying the fermented mixture to obtain Sasa borealis powder in the inflow air temperature at 160-200 deg. C and the outflow air temperature at 90-120 deg. C; and mixing the Sasa borealis powder with coffee powder in a weight ratio of 0.1-5:95-99.9.
