<P>PROBLEM TO BE SOLVED: To provide a method for producing fried Tofu (bean curd) which contains much insoluble dietary fiber by preventing swelling deterioration when producing the fried Tofu by coating treatment of insoluble dietary fiber to be added to the raw material of the fried Tofu. <P>SOLUTION: This method for producing the fried Tofu comprises coating the circumference of insoluble dietary fiber with a material with low water absorbency, adding the coated insoluble dietary fiber to soymilk to produce Tofu, and frying the Tofu in a food oil. At least one selected from calcium carbonate, calcium sulphate, silica, and diatomite is used as the material with low water absorbency. <P>COPYRIGHT: (C)2010,JPO&INPIT |
