PURPOSE: A producing method of fermented rice powder with improved fiber property is provided to prevent damage to fibers and nutrients in rice after fermenting. CONSTITUTION: A producing method of fermented rice powder with improved fiber property comprises the following steps: fermenting Fomes fomentarius or Phellinus linteus mycelia to obtain a fermented mushroom extract(S10); polishing brown rice to obtain rice bran(S20); crude-crushing the rice(S30); mixing the fermented mushroom extract and water in a ratio of 10:90(S40); mixing 19-29wt% of diluted mushroom extract, 3-8wt% of rice bran, and 63-78wt% of rice in a stirrer for 1-3 hours, and ferment-aging the mixture(S50); inserting the fermented mixture into a crusher, and crushing the mixture into the size of 100-200 micrometers(S60); and drying and packaging the obtained rice powder(S70).
