<P>PROBLEM TO BE SOLVED: To provide a food composition for preparing half frozen state foods such as a shape-retaining frozen dessert by freezing and then mixing with an aqueous medium containing a bivalent metal ion, such as milk. <P>SOLUTION: There is provided a food composition containing low methoxyl pectin and high methoxyl pectin, and for preparing half frozen state foods by freezing and then mixing with an aqueous medium containing a bivalent metal ion. There is also provided a production method of half frozen state foods by freezing a food composition containing low methoxyl pectin and high methoxyl pectin and then mixing with an aqueous medium containing a bivalent metal ion to prepare the half frozen state foods. <P>COPYRIGHT: (C)2013,JPO&INPIT |
