A method for making pelmeni dough is carried out by means of mixing dough, water, eggs, salt and kneading dough up to homogenous consistency, keeping the ready dough and imparting elasticity thereto. At the stage of mixing flour with the water, in which citric acid is preliminary diluted, whey is added, and while keeping the dough a boiled half-finished product is prepared and is added to the preliminary prepared dough. The ready dough is mixed and cooled. |
