PURPOSE: Deep-fried mulberry leaves coated with glutinous rice gruel offering a blood sugar control effect to diabetic patients, and a producing method thereof are provided to enable the patients to eat the deep-fried mulberry leaves as one of side dishes for a meal. CONSTITUTION: A producing method of deep-fried mulberry leaves coated with glutinous rice gruel comprises the following steps: mixing 10L of water and 3-4kg of bay salt to obtain salt water, and boiling the salt water; parboiling washed mulberry leaves with the salt water for 40-80 seconds; drying the parboiled mulberry leaves using trays in a shaded drying chamber; coating the dried mulberry leaves with the glutinous rice gruel, and freeze-drying the mulberry leaves; frying the mulberry leaves using 140-160 deg. C vegetable oil for 4-6 seconds, and removing the oil from the fried mulberry leaves; and sprinkling 10-15g of sugar, 7-10g of silkworm powder, and 5-8g of dried mulberry powder to 100g of fried mulberry leaves. |
