PURPOSE: A producing method of rice noodles containing rice bran powder is provided to use rice bran containing dietary fibers, and to prevent the noodles from cutting. CONSTITUTION: A producing method of rice noodles containing rice bran powder comprises the following steps: mixing japonica rice and indica rice(S1); washing the mixed rice with purified water, and soaking before crushing into 150~200meshes powder(S2); pan-roasting the rice bran(S3); adding water to the mixed rice powder, and steaming(S4); mixing the steamed rice powder with 10% of rice bran and 3% of starch, and kneading(S5); molding cooked noodles with the obtained paste using a mold frame; cutting the noodles(S6); and rapidly freezing the noodles for more than 2 days(S7). |
