PURPOSE: Red pepper paste containing fermented tomatoes, and a producing method of thereof are provided to reduce the spicy taste of the red pepper paste. CONSTITUTION: A producing method of red pepper paste containing fermented tomatoes comprises the following steps: crushing fresh tomatoes and onions; adding sugar into the crushed ingredients; fermenting the mixture for 2-3 months at 25-35 deg C: aging the fermented mixture for 8-12 months at 15-25 deg C: and mixing the fermented and aged mixture with red pepper powder, fermented soybean powder, salt, and soy sauce to obtain the red pepper paste. |
