METHOD FOR CREATING BAKER'S YEAST WITH ENHANCED GLUTATHIONE PRODUCTION

PROBLEM TO BE SOLVED: To provide: a method for creating new baker's yeast with enhanced glutathione production; dried yeast powder containing high glutathione content using baker's yeast obtained by the method, and production method thereof; and a method for producing foods such as bread using the dried yeast powder obtained by the method.

SOLUTION: This baker's yeast with enhanced glutathione production is obtained by screening a cadmium-resistant strain as a primary step and a cycloheximide-resistant strain as a secondary step from a baker's yeast Saccharomyces cerevisiae and/or the baker's yeast subjected to mutation treatment.
