PURPOSE: A separation and refining method of ovotransferrin obtained from egg whites, and anti-cancer functional food using thereof are provided to adsorb Fe3+ ions with to the ovotransferrin for refining the ovotransferrin. CONSTITUTION: A separation and refining method of ovotransferrin obtained from egg whites comprises the following steps: separating egg yolks from the egg whites, and mixing the egg whites with distilled water; mixing the egg white solution with 100ml of ovotransferrin solution and 3ml of FeCl3 6H2O, and adjusting the pH of the mixture into 7.0; centrifugal-separating the mixture after adding ethanol; dissolving obtained residues in water, and adjusting the pH of the mixture into 4.5-6.5; and absorb-filtering iron using an AG1-X2 ion-exchange resin. |
