PURPOSE: A red ginseng pudding, and a producing method thereof are provided to use red ginseng paste to reduce the bitter taste of red ginseng and improve the eating texture of the pudding. CONSTITUTION: A producing method of a red ginseng pudding comprises the following steps: producing red ginseng paste using red ginseng concentrate, a red ginseng boiled extract, or red ginseng powder; boiling a mixture containing a gelling agent and purifying water; mixing the obtained mixture with red ginseng solids; and inserting the red ginseng paste into the mixture, and cooling the mixture for gelling. |
