STABLE SOLID FORM AGAVE SWEETENERS AND METHODS FOR MANUFACTURE THEREOF

The invention relates to dry forms of agave sweeteners and in particular to methods for manufacture of dry sweeteners from agave nectar by a process comprising lyophilization. Methods for producing agave sweeteners in crystalline, powder, granular or amorphous form are provided. Manufacture using lyophilization techniques retain beneficial characteristics of the agave nectar that are lost when it is dried by other techniques.
