<P>PROBLEM TO BE SOLVED: To provide a production method for obtaining a cream puff having improved volume, crisp texture, and meltability in the mouth. <P>SOLUTION: In the method for producing a cream puff by boiling and mixing water and oils and fats, adding wheat flour to the mixture, then mixing the mixture with eggs to prepare cream puff dough and baking the dough, after addition of wheat flour, cream puff dough to which an oil-in-water type emulsion is added is prepared. <P>COPYRIGHT: (C)2013,JPO&INPIT |
