PURPOSE: Producing method and apparatus for black ginseng capable of easily steaming ginseng are provided to obtain the black ginseng with high ginseng saponin content. CONSTITUTION: A producing apparatus for black ginseng comprises the following: an inner case including an internal space; an outer case surrounding the inner case with the predetermined interval, capable of storing water on the lower side; a bottom plate unit(20) located on the lower side of a main body(10), including a water heating unit(21) for heating the water on the lower side of the outer case; a hot-air container(30) transferring steam generated from the heated water to the upper side, and discharging the steam to the outside; an outlet(14) for discharging the steam from the inner case to the hot-air container; a cover(40) for controlling the discharging amount of the steam from the inner case; plural trays(50) with holes for storing ginseng; a tray fixing unit(13) for fixing the trays; and a temperature and humidity controller(60).
