The invention relates to the wine industry, namely to a process for grape harvesting for wine production.The process, according to the invention, includes the selective harvesting of grapes in two stages, the first stage is carried out upon attainment of the technological maturity of grapes and provides for the harvesting of 1/3…2/3 of their quantity with preservation on bushes of the healthiest and most developed bunches of grapes, and the second stage involves the harvesting of the remaining grapes upon attainment of overripeness and/or partial shriveling thereof. At the same time, the grapes harvested in the first phase are used for the production of ordinary wines, and in the second stage - of elite wines. |
