PURPOSE: A producing method of hand-kneaded noodles using rice is provided to steam rice and black rice before mixing the flour to obtain noodle dough for improving digestion property. CONSTITUTION: A producing method of hand-kneaded noodles using rice comprises the following steps(1): mixing 70wt% of rice and 30wt% of black rice; mixing the rice mixture with water in a ratio of 1:1, and steaming the mixture in a steamer; mixing the steamed rice mixture with water in a ratio of 1:1 for finely crushing; mixing 33wt% of steamed rice powder, 42wt% of flour, and 25wt% of water, and kneading the mixture to obtain dough; aging the dough at 0 deg C for 23 hours; hand-kneading the aged dough; and molding noodles using the dough. |
