<p>A system (100) for the detection of aflatoxin in food is described, the system comprises: at least one source (20) of radiation for irradiating a food sample that is capable of generating corresponding fluorescent emissions and a device (30) for the acquisition of images of said sample. The system is characterized in that said images are digital images that define a first plurality of pixels, an emission level associated with the fluorescence being associated with each pixel. Moreover, the system comprises a processing unit (40) configured for defining, based on the emission levels, a number of selected pixels to which an estimated presence of aflatoxin corresponds and for supplying information indicating a quantity of aflatoxin present in the food sample based on said number of selected pixels.</p> |
