Methods for preparing alginate-based compositions, as well as related compositions, food products, and articles, are disclosed. In some embodiments, an alginate-based food product (e.g., an alginate-based alcoholic food product) can be prepared by adding an aqueous composition containing a multivalent salt (referred to herein as "the second composition" or "the second liquid") to an aqueous composition containing an alginate alkali metal salt (referred to herein as "the first composition" or "the first liquid"). The resultant food product includes an aqueous solution encapsulated by a water-insoluble, alginate-based coating. |
