摘要 PURPOSE: Chocolate containing mulberry, and a producing method thereof are provided to enable users to eat physiologically active components of the chocolate and medical components of the mulberry at once. CONSTITUTION: A producing method of chocolate containing mulberry comprises the following steps: washing the mulberry, and juicing the washed mulberry before concentrating the obtained mulberry juice into 50-60 Brix(S10, S20); freeze-drying the mulberry, and crushing the mulberry into 100-300 meshes to obtain mulberry powder(S30); double-boiling chocolate containing 45-60wt% of cacao at 40-60 deg. C to obtain a chocolate sample(S40); mixing 100 parts of molten chocolate sample by weight, 5-20 parts of mulberry powder by weight, 3-10 parts of mulberry concentrate by weight, 30-40 parts of fresh cream by weight, and 1-5 parts of citric acid by weight; stirring the mixture at 35-45 deg. C(S50); injecting the mixture into a chocolate molder, and molding the mixture(S60); and freezing the molded mixture(S70).
