PURPOSE: A Pediococcus pentosaceus strain isolated from Kimchi is provided to ensure high antibacterial activity and to be used in various industrial field. CONSTITUTION: A Pediococcus pentosaceus KFCC 11504P is isolated from Kimchi and has an antibacterial effect against Salmonella typhymurium, Micrococcus leteus, Bacillus subtilis, Bacillus cereus, Vibrio parahaemoliticus, and Escherichia coli. The strain also has acid resistance and bile acid resistance. An antibacterial composition contains the strain, culture liquid thereof, concentrate of the culture liquid, or dry material of the culture liquid as an active ingredient. |
