PURPOSE: A Leuconostoc mesenteroides strain isolated from Kimchi is provided to ensure excellent antibacterial activity and to be used as a probiotic agent. CONSTITUTION: A Leuconostoc mesenteroides KFCC 11452P is isolated from Kimchi and has an antibacterial effect against Micrococcus leteus, Salmonella typhymurium, Vibrio parahaemoliticus, Bacillus subtilis, Bacillus cereus, and E.coli. The strain has 16S rRNA with a base of sequence number 3. An antibacterial composition contains the strain, culture liquid thereof, concentrate of the culture liquid, or dried material of the culture liquid as an active ingredient. |
