摘要 A method for making boiled-flour cakes comprises boiling wheat flour with an invert syrup, cooling pregelatinized flour, making dough, forming dough half-finished products, baking, cooling, tiraging and drying the ready products. According to the invention, while preparing the pregelatinized flour for the wheat flour boiled with the invert syrup, carrot puree with an increased content of low methoxylated pectin in an amount from 3.5 to 20 % from the mass of the pregelatinized flour is added.
