PREPARATION METHOD OF CONCENTRATE COMPOSITION CONTAINING EXTRACT OF POLLACK AND CONCENTRATE COMPOSITION USING THE SAME

PURPOSE: A concentrated composition containing a yellow dried pollack extract, and a producing method thereof are provided to produce the composition without using chemicals or other saccharides. CONSTITUTION: A producing method of a concentrated composition containing a yellow dried pollack extract comprises the following steps; washing yellow dried pollack and other fresh ingredients, and removing the moisture; finely cutting the ingredients, and inserting the cut ingredients into a container with water before sealing the container; inserting the container into a bigger container with water, and double boiling the container for 8-15 hours in the medium heat at 60-70 deg. C; removing solid parts from the extract, and mixing some of the extract with 40-60wt% of glutinous rice to obtain hard-boiled rice; mixing the rest of the extract with malt, and removing empty heads of grains from the mixture to obtain filtered liquid; mixing the hard-boiled rice and the filtered liquid in a ratio of 10-20:80-90, and fermenting the mixture at 60-80 deg. C for 7-8 hours; mixing the fermented mixture with the filtered liquid, and heating to obtain the composition; and removing the rice grains after cooling the composition, and concentrating the composition by heating.
