METHOD MANUFACTURING OF CATECHIN RICE

PURPOSE: A producing method of functional rice containing catechin components is provided to prevent the loss of catechin from the rice during distribution, storage, and polishing processes. CONSTITUTION: A producing method of functional rice containing catechin components comprises the following steps: spraying green tea fermented liquid on rice in the yellow ripening stage; harvesting the fully grown rice; soaking the rice with green tea water containing green tea powder and water in a volume ratio of 1:100 for 40 hours; and drying the soaked rice, and polishing the dried rice.
