PURPOSE: A processing method of chives partially cutting the root is provided to minimize the number of remaining roots of the chives for improving storage property. CONSTITUTION: A processing method of chives partially cutting the root comprises the following steps: cutting the root of the chives or spring onions by remaining the cut roots(10) in the root bulb(2); removing the scales of the chives or the spring onions using a blower; and tying the chives or the spring onions without the scales into the predetermined sized bundles or packaging with a bag.
