PURPOSE: A beverage extracting apparatus and method are provided to set a proper time of dissolving or infusing filler of a capsule according to the characteristics of the filler or volume of the capsule by employing a valve on the discharge path of beverage. CONSTITUTION: A beverage extracting apparatus comprises a flow control sensor(220) controlling the flow rate of supplied liquid, a pump(230) supplying liquid under the control of the flow control sensor, a liquid supply punch(250) opening the capsule and supplying the liquid, and an extracting valve using a solenoid valve for opening and closing the discharge path of beverage.
